Sesame peanut noodles

Dinner tonight was so easy. If you ever need a dish to make in a flash or something for a potluck where you don't want to spend all day in the kitchen, this is it! All of my kids love it. My husband loves it. I love it!

I've tried making peanut sauces numerous times over the years, and I've never been really satisfied. Then I found a recipe in the Gourmet Cookbook. It is so good, you'd swear you got it from your favorite Chinese restaurant. And it's so easy, you won't want to admit how little time it took you to make!

I've adapted the recipe a bit to my tastes. If you use gluten-free noodles—and check labels carefully—the dish is also gluten-free.

Sesame Peanut Noodles — prep time: 30 minutes; serves 8

Ingredients

1 cup smooth peanut butter

1/2 cup tamari (wheat-free soy sauce)

1/4 cup red wine vinegar

3 tablespoons pure sesame oil

1 tablespoon agave syrup

2/3 cup warm water

1 teaspoon ground ginger

3 garlic cloves, minced

2 teaspoons red pepper flakes

1 pound dried thin noodles (rice, soba, or whatever you like)

1/2 cup chopped green onions

2 bell peppers (two different colors), thinly sliced

2 carrots, shredded

1/3 cup sesame seeds, toasted for a few minutes

 

Directions

Cook noodles according to package directions. Cook only to al dente.

Place all ingredients from peanut butter through red pepper flakes into a blender and blender for a few minutes until smooth.

Pour sauce over noodles and mix well to coat all noodles. Top with bell peppers, carrots, sesame seeds and green onions. May be served warm or cold. Room temperature is great!
